I started making cheese in late 2016. So far I've made 90 batches of cheese in 4 gallon batches on average. I've tried and mostly successfully made 30 kinds of cheese. Most of what I learned in the beginning was from Gavin Webber's videos. I've branched out to a facebook page of 'learn to make cheese'. I also use David Asher's book The Art of Natural Cheesemaking.

I love it, it is a great craft! Thank you for all the informative posts here, they have answered many questions I've had over the past year.

Somewhere, some long time ago, milk decided to reach toward immortality... and to call itself cheese.
