Hi all! New to the forum so starting here. I'm in Knoxville, Tennessee, USA. I started cheesemaking six years ago. They were mostly flops so I got frustrated and took a break. I rekindled my cheesemaking several months ago. Currently have some Parmesan and raclette in the cheese cave. I love making cheese, keeping my cheese log with my daily observations, and eating the end product!
