Hi everyone!  I'm a newbie cheese maker in Round Rock, Texas.  I'm just a hobbyist (is that a word?), making cheese for my family.  Like Hermione on Harry Potter, I thought if I followed the recipe precisely, I'd get good cheese.  Now I know that there's an art as well as a science.  I'm looking forward to getting some real world advice on top of the recipes.
