I understand that liquid rennet has a usable lifetime of a year or so. What is the usable lifetime of rennet tablets? I've got a dozen of them, and you use them in tiny pieces. I figure they probably have a long shelf life. Best stored refrigerated?

Rennet liquid is starting to loose efficiency as the use by date approaches.  I have pressed my luck with it a couple of times and it does not usually end well.
I have heard that tablets last a long time, but have not tried this to check it out.
I have also heard that the results you get using them are pretty variable, so they can't be completely trusted.
I would recommend using liquid rennet within date if you possibly can, it's the safest option.

Thanks. A few ounces of liquid rennet is more than I'll use in a year. That's why tablets are handy. Amazing how little it takes. Also, I understand that you can't freeze liquid rennet. It won't work when you thaw it.

Having just reported that you can't freeze rennet (which I read in several places online), I see on the instructions that came with my rennet tablets (which I stupidly didn't look at), that the tablets will last for three years if kept in the freezer. So don't freeze liquid rennet, but go ahead and freeze your rennet tablets.
