Well i am. A little about me.
My name is Jon
I have always loved food so now i want to start making my own. To that end i will be reading all the post i can on here until i am comfortable and equipped enough  to start cutting some curd.

anybody have a suggestion for a first cheese?

Jon, welcome to this forum, a couple folk I think from Washington State but I don;t remember anyone from Seattle. There is a sticky post here for people new to cheese making. Don't know what kit you have but soft cheeses are easier and faster and don't need press and aging equipment. Good luck!

I have not bought a kit yet.

I am traveling in Europe until august, after that i plan on setting up shop.

Any suggestions on what kit i should purchase? I would like to start making both soft and hard cheeses at the same time.

For equipment you'll need normal household stuff plus small volume measuring tools or tiny scale for cultures, moulds or hoops and press, digital thermometer, plus cheesecloth. There is some info here plus you could serf the equipment boards to get ideas.
