Hi to everyone,

Complete novice to cheese making. Have 3 heifers (Jersey, Ayrshire and Dairy Shorthorn) and 1 Jersey milking, currently selling raw and pasteurised milk and butter small scale. Looking forward to producing my own range of cheeses so know I'm going to learn shed loads reading through the forum.

Hi Trina and welcome to the forum!  You must have a LOT of milk to work with!  Your breed choice is of interest to me...Ayrshire I have heard about only from my husband who grew up in a farm in northeastern US with milking Ayrshires.  I also did not know there were Dairy Shorthorns...my friend raises the Beef type.  The Jerseys, I have worked with their milk for the past few years...depending on their diet the butterfat (aka cream) can be a bit overwhelming! but makes for a higher yield in cheese. 

So yes for cheesemaking guidance you have come to the right place here on the cheese forum; I have learned so much here! Please feel free to post any questions/comments/experiences you may have on your cheesemaking journey. --Susan38

Trina, welcome to the forum! Like the others, I envy your milk ... but I'm happy to let you do the twice-a-day milking! :)

Welcome, from another newbie to the forum.  All that raw milk, you're going to be able to make some great cheese!
