Min batch for typical Taleggio mold

Hello everybody!
Hope everyone is staying healthy and safe.
Since we are practically in a lock-down here in Toronto, ON Canada, i've been keeping busy by making tons of cheese!
I'm looking at making a Taleggio.  Have the typical square mold with the patterned follower...thanks GlenGarry !
Just wondering what would the minimum #gallon batch would you recommend for this size mold? 
I'll be using Caldwell's recipe and she just states a mold that would be 1:4 ratio.  Her recipe calls for a 2 gallon make.

Hi Mina!

I used my dollar store version of a Taleggio mold, approximately the same length and width, but only 4" tall, as opposed to 6" for the traditional mold.  I was able to get almost all of a 2.5 gallon batch into it, and the cheese ended up about 2" tall. So I think you should be fine with anything from 2 to 3 gallons.
