Hello all.  I am from Pontypool in Wales.

I have just started the journey into cheese making.  Not as yet made any, just reading and learning.  Hope to make my first wheel in a week or two.

Thank you for the warm, Welsh welcome.  I am actually English just living in Wales.

I am going to start with a cheddar and while that is maturing, I shall enjoy some creamed cheese, Philadelphia style.

That's an ambitious first cheese!  Not that it's difficult, but be sure you have an entire day.  It might take longer than you think!  Keep us posted.
