Fried Smoked Halloumi

I think we may have discovered the perfect way to serve our homemade Halloumi cheese.... We cold smoked it, fried it in bacon fat, and then sprinkled with lemon juice and Italian seasoning.... The cast iron skillet keeps it warm at the table....



The Halloumi softens without melting when the outside is caramelized, and all the flavours come through without masking each other.... the applewood smoke, bacon, lemon, and spices.... YUM !!!!!!!

Grilling it works wonderfully well too!

We tried it grilled before we cold smoked it.... it has a rather bland taste and once cools becomes rubbery.... although the lemon and spices helped.... Smoking it, and frying it in bacon grease.... and serving it on the cast iron to keep it hot and soft.... took it to a whole new level, IMO....

It still amazes me that you can grill a cheese without it melting....  :o

Halloumi is by definition bland.  That sounds like an excellent way to treat it!
