Fromage Pave

Hello out there...does anyone know anything about the cheese pictured below?  It has become a favorite of a relative, and unfortunately is only available in her area during the Christmas season.

Loosely translates to "cobblestone cheese"?  There must be an interesting story/history?

More importantly, exactly what type of cheese is it?  Any recipes for it out there?

I haven't seen or tried it. But it's described as a triple cream cheese in the tradition of Pavé d'Affinois/Fromager d'Affinois. You have a great recipe and discussion here that you might use as a starting point.

Triple creme cheeses are dead easy to make and are incredible.  I highly recommend giving it a shot.

There are several varieties of Pave available in France.
From what I have read here in Europe, it is similar to a camembert or a brie.
It is usually made from cows' milk but goats' or sheeps' can also be used.
This cheese is mild and very creamy.

I expect you could make something very similar with little or no trouble.



The block of cheese looks like a cobble stone, hence its name.

Thanks for all the responses and info!  I feel like I now "know" this cheese, even if I haven't tried it.  Here I was thinking it was some ancient cheese, only to find it was first created in 1981.  But sounds like a true winner.  Can't wait to try it sometime, if I can find it in any stores.  Also excited to see Andy's recipe that I might give a try at some point in time.

Happy New Year everyone!  It's been fun to read about so many people making more cheese in 2020 due to more spare time.  For me it was the opposite, due to those time-consuming life commitments and outside circumstances no one can predict...but hoping to catch up in 2021.
