Two Reveals - Edam and Havarti

We are getting ready to prepare our New Years Cheese Plate, using our own cheeses, and that meant I had to crack open our first Havarti (6 weeks old)....



and also our first Edam (2 months old)....



It was also a chance to use my new cutting board, made with 80 lb. test stainless fishing leader wire.... It worked perfectly....  8)

Both cheeses had good small eye development, in fact the Edam we had to rewax at 5 weeks because the wax split.... We used MM 100 for both.... How do they taste, you ask?.... I'll tell you tomorrow, after we devour the fruits of our labours.... but a sneak nibble of the crumbs is VERY promising (just don't tell my wife).... ;)

Those two have a lovely shape and a great wax work... but the cheese cutting board steals the show for me, looks very similar to professional ones. Wonder if it would work better with the screw in one of the shorter sides... now I have a new DIY project to add to my list. Thanks for the inspiration and AC4U!

Our largest wheels are less than 6", and the board is over 6" between the grooves (on the short dimension).... If you make the wire too long, you'd have to have monkey arms to draw it back at the end of the cut, because you lay it under the cheese against the board, up the back and then across the top.... Effectively you have a 2:1 leverage (which makes cutting easy).... but it doubles the length you have to pull the handle when cutting....  ;)
