When is a Wensleydale no longer a Wensleydale?

Once it is over about 3 months old!....  :o

We tried the last of our Wensleydale today, and it is now most definitely a Cheddar!.... I remember reading a post by Sailor when we made ours, 5 months ago, that said that if you age a Wensleydale past 3-4 months it undergoes a change to a Cheddar.... and he is absolutely correct!....  8)

The cheese is still quite delightful, but the big change in flavour between 3 months and 5 is surprising to me.... It makes me look forward to tasting our Cranberry Wensleydale that we made a couple of weeks ago in another couple of weeks....

We tried our Cranberry Wensleydale today at 1 month, and it is a screaming success....  8)



Next time we will coat the entire outside with a dusting of Cinnamon, as it is a perfect compliment to the Cranberries.... Neither overpower the cheese, and it is just slightly sweet.... It slices beautifully, and the paste is nice and tight.... All in all a winner for sure!.... We can't wait to try it each month as it continues to age....
