Can anyone point me to a source for a ripining box?

I've looked all over but must have the wrong search term (surprisingly).

I've attached a pic of some boxes that the website that I go to uses. Can't find anything like it. suppose I could make my own...?

thanks,

Noel

Like this?
The usual function is for keeping a soft cheese safe while shipping/handling. They don't do anything functional for the aging process (the cheeses are aged on shelves, then wrapped in special cheese paper and aged further, then boxed to ship).

Or are you looking for a commercial source for large volumes?

You can buy rubbermaid containers at the grocery store, or something at the dollar tree (or equivalent).  My favorite is my $1 cake holder, although I do have to cut my mats into weird shapes to accommodate it.

Ok, looks like I don't need them for the aging process then. Good to know. Right now I'm just putting them in cheese paper and a cheese bag and letting them age in my fridge. Guess that will do just fine. Thanks,

a ripening box is actually a sealed container with a draining mat at the bottom that allows you to maintain the  high humidity necessary for certain cheese like Brie/camembert and blue cheeses while they age at the correct temperature (7C for Brie and 13C for blue)  It is very different from a wooden box which isn't air tight. There is a New Zealand company called Sistema who make good ones. Expensive but last a long time. I think the proper draining boxes are easier to find in some countries the others. Gavin Webber uses them in Australia and calls them microwave boxes but in the uk such boxes have no draining rack.

Try the ones by Decor. I use them all the time and have a rack inside to keep the cheese from the bottom of the container. Check my Malembert cheese makes on this forum to see what I mean.
