New Cheesemaker, Tons of Questions

Hello everyone!   

I have a small herd of Kinder Goats which provide my family with all the milk we could drink plus a little extra for making dairy products.  This is the second year I've been milking, and I have just taken up cheese making.  I've been cranking out two and half gallon batches of Chevre weekly because my family loves it that much.  As far as hard cheese goes, so far I've made two colbys.  One is still in the aging phase and the other is waiting to be waxed tomorrow (I use my sister's beeswax to wax my cheeses).  I'm going to order myself a good cheesemaking book so I can get a bit more basic understanding under my belt, but I know I'll have tons of questions for you all to answer as I go.  My other hobbies include soapmaking, knitting, crochet, and a few other artistic and musical outlets.
