Hello. My name is Stacey, I live in South Dakota and I am new to cheese making. I have enjoyed reading some of the topics on this forum. I have tried making chevre, strained buttermilk cheese, and ricotta salata because none of those required a press, though I would really like to work up to making my own cheddar. With 3 young children, one of whom doesn't like cheese, the time that I am willing to devote to cheese making is limited. I know I won't advance very quickly without practice, but I'm glad even failures are usually tasty.
