Hello. My name is Stacey, I live in South Dakota and I am new to cheese making. I have enjoyed reading some of the topics on this forum. I have tried making chevre, strained buttermilk cheese, and ricotta salata because none of those required a press, though I would really like to work up to making my own cheddar. With 3 young children, one of whom doesn't like cheese, the time that I am willing to devote to cheese making is limited. I know I won't advance very quickly without practice, but I'm glad even failures are usually tasty. I'm learning using the free eBook on cheese making from Cultures for Health, and I find myself looking for ideas here when the results are unexpected. I'm thankful I have several friends with dairy animals, and someday hope to keep a dairy animal or two on our bit of pasture once the children are old enough to help more and don't need me to carry them. I also have dabbled in soapmaking, am an avid though not particularly expert sourdough enthusiast, keep a few too many chickens and wish that my garden were weeded.
