Wax, cream wax and PVA coatings

Hello all, new forum member.  I just got back from a two week vacation in the EU and spend some time in
The Netherlands.  We spend a day at a Gouda Cheese farm.  They have an 800 gallon capacity for each batch.

They make gouda cheese and age the cheese from 6 weeks to 7 years.  They do not use wax at all.  They even indicated to never buy cheese that is wrapped in wax.  The cheese needs to breath to age properly.  The cheese that ages 7 years decreased in size over half.  After 7 years it the very crumbly and is used by a bakery as a toping on crackers.

For cheese coating they use a food safe polyvinyl acetate.  I have searched and cannot find PVA that is food grade, only wood glue that is food safe for indirect contact (making cutting boards) 

I saw the post on using Hoegger's cream wax and ordered some.

Does anyone know where I can order home quantities of PVA glue for cheese coatings?
