Hello

I have a question that probably can be only answered by cheese enthusiast, but I should introduce my problem first.

After eating most "generic" type of cheeses, like Gouda, Camembert, Parmegiano Reggiano or Cheddar I get acne (bloated, allergy like) a week later. It's not life threating, more of annoyance. It's definitely not related to lactose, as I don't have that issue after other diary product and there's no such specialized allergy test available. From what I can buy at local stores I also know I can eat Scamorza and Mascarpone (but no "generic" sandwich soft cheese) without getting acne. I might need to check again Mozarella, but as far as I remember it gave me acne too.

I would like to know how those safe cheeses are different from others and what should I try to be able to pinpoint what exactly gives me the acne. I also would like to find safe counterparts of Parmegiano, Roquefort and Camembert cheeses.

Regards
Grzegorz
