Feta & Pumpkin Pastries

Here is another way that we use feta.  One of my girls made these on the weekend.  Was a little heavy handed with the filling so some of them burst open, but you get the idea.

1/2 butternut pumpkin cut into 1in cubes roughly.
2-3 cloves of garlic
herb oil
salt/pepper
1lb feta
1/4 lb butter
1 pkt filo pastry

Put pumpkin on a baking tray, crush garlic over, sprinkle with oil, and put into oven and roast until pumpkin is soft.
Transfer into a large bowl.  Break approx 1lb of feta into the pumpkin and then using a potato masher, mash altogether.
Using 2 sheet of pastry at a time, brush with melted butter.  Cut sheets lengthwise into 3 strips.  At the bottom of each strip place a spoon of pumpkin mix. Start folding up the pasrty on the diagonal to form triangle puffs.  Lightly brush over with butter and cook in a hot over for approx 1/2 hour or into lightly brown.
Serve with you favourite dipping sauce.
