Mold - What to Do?

The lard is a barrier that is supposed to keep unwanted molds out of the cheese itself, so it shouldn't matter what grows on the bandage.

MrsKK - Isn't the unbandaged lard awfully messy?

My problem with this is that I really do no want to pollute the inside of my cave with these molds.  I have other cave residents that may not like that amount of
I love the bandaging and larding of the wheels.  But in order to do this, I really need a dedicated cave.

I agree Wayne. I do everything I can to keep contamination at a minimum. I don't see the upside to bandaging - other than it looks cool. Does it make a better cheese? I doubt it.

There is something tactily satisfying and visually appealling to a tightly bandaged and larded wheel of your own cheese.

Its a real connection to the old school methods that appeals to me.


But in the end, i'm not sure what the advantage is over vacuum sealing. My mind says nothing.
