hi to everyone
just registered and thought I would introduce my self.

I live in NZ and am self employed milking 450 dairy cows - mostly Jersey.
Have always loved cheese!!!
Thats the eating part mostly...  :)
I went on a little short course on cheese making and as I type am making my first feta.
Fingers crossed for a good outcome.

This looks like a nice informative forum.

Welcome Cath. 450 cows is a really good herd - congrats. Your just starting to make cheese with all that milk? Good luck to you.

thanks for the welcome Debi.
our milk is supplied to Fonterra in NZ.   It is picked up daily by tanker.
goodness - imagine having to make cheese with 8000 litres every day!!!

nope, I took 5 litres out today to have a go at my first attempt at making feta.  home consumption type stuff.

Cath, welcome to the forum, I have no clue of dairying but 450 cows, wow ::).

Lot's of cheese heads here, and a few Kiwi's!

thanks for the welcome folks...
feta is made and I have half in hoops and half in a muslim bag, both to drain overnight...

oddly enough - I am really excited over it!!!!!!

It's pretty normal to get excited over your new cheeses. I have been making cheese off and on for 30 years and every new cheese gets me excited. Part of the thrill of the make.
