Hello from central Indiana everyone,

Been making cheeses a short while now, but I'm fairly prolific at it. I'm always wanting to update and increase my knowledge about cheesemaking. I like making bigger rounds of cheese to allow them to really develop a good flavor throughout, and I'm always experimenting with cultures (within reason) to see how it changes the taste and texture of the cheeses. Looking forward to the conversations on cheesemaking and everything else!
