Liquid Rennet Suppliers

Hoping someone can help....

We supply cheesemaking ingredients in New Zealand and have an issue with the supply of rennet.

We buy liquid microbial rennet from Renco (NZ company), and they have indicated that next year they will cease production.

I really don't like tablets as you can't measure precisely so want to find a new supplier.

I know the supplier will be our of New Zealand but I am interested to investigate and consider importing.

Currently the strength we buy is 240IMCU but we don't have to stick to that - we just are not interested in commercial strength as our customers are all home cheesemakers.

If anyone is able to give me supplier names / details from anywhere in the world I'd be grateful and will look into it.

Most of our competitors have switched to tablets and we can too - we just want to try really hard to find a liquid rennet source.

You should have a conversation with New England Cheesemaking Company and see if they can tell you about their suppliers and get you some contact information. I believe they are able to do some exports and international shipping.

I'm not sure, but I think their branded liquid rennet is actually WalcoRen 300 IMCU/ml (94L300):

Their "double-plus" vegetarian rennet I believe is rebranded WalcoRen microbial rennet, which is 680 IMCU/ml.

Their chymosin rennet is Chy-Max.

I'll bet you could establish a direct import from WalcoRen (Canada) and resell any of their rennets.

Liquid rennet is great for small makers and beginners of course. I've switched to using WalcoRen's powdered rennet with a sub-gram scale at home with great results, and I'm happy to share my conversion formulas from NECM's liquid rennet amounts to weights of Walcoren's powdered rennet.
