Kefir Ice Cream

Fermented ice cream, who knew?!
I added the kefir grains to a pint of heavy cream, and it thickened up nicely over about 30 hours. Tart, but not too strong... I added the pint to 2 cups of plum purée, 1/4 cup sugar, some vanilla and brandy....
This is an experiment to be repeated!
After rinsing the grains, regular milk coagulated as normal.

That's a fun experiment. I can imagine clabber or even just plain old sour cream would help produce a really flavorful ice cream.

Personally, I find the store bought ice cream to be too sweet, too laced with artificial thickeners. Thickening it with kefir or other cultures and getting that acidic contrast would be nice.
