How to get a good rind on stilton.

I've tried various ways and environments to get a good find one my stiltons.

Cloth wrapped

Salted and cloth wrapped

Cloth wrapped and tubbed

Left on a board and scrapped bluing then still most.

I try and keep environment at 10c and 85%h with one daily airing in a converted fridge. Moisture using cheese ourself and sponge and water bath.

Advice and photos would be great.

I've not done a stilton myself, but search for "rubbing up" the sides of the stilton to get some ideas of typical rind treatment. Being a blue, you want oxygen and airflow for the rind, but stilton is a particular challenge due to its more inherent crumbliness.

I wish I could be of more help. My blues have been more of the French and Spanish styles thus far.
