Paneer Cheese - Using Grapefruit Juice

I had about half a gallon of milk leftover from another cheese. It wasn't enough to make anything big, and my camembert molds were already in use, so I decided to make a simple fresh paneer. Unfortunately, I had no yogurt, and the only lemon I had was needed for dinner. I did, however, have some grapefruits, and seeing as they are in the same family as lemons, thought it would be an acceptable substitution.
I hadn't really made any fresh cheese before, except ricotta from whey leftover from hard cheeses. The paneer was so quick and simple; it was completely done in 6 hrs. And delicious. My girlfriend and I nibbled it away to nothing in a few days. I didn't put any herbs or anything into it, but it did have a subtle grapefruit flavor that was very nice.

I think I'd do vinegar (or yogurt) next time and put some kind of herbs in it.

It looks great Mark. I like dill in cheese or basil.

Try lime sometime. Then add some dried tomato- crushed or powdered- and chili pepper along with salt to taste.

I was thinking about using different citrus fruits, but I wouldn't have thought to add sun dried tomato and peppers. It sounds delicious!

What a great thread! It is very interesting to see the variations on a theme. Ruby Grapefruit Paneer wow!  Was the grapefruit flavor subtle?

I have seen recipes using vinegar. I wonder what Japanese sweet rice vinegar would yield. Could you tell the difference from cedar vinegar?

Yes, just a hint of grapefruit flavor. Simple and quite versatile.
