Hello from Connecticut

Hello everyone

My first post here, actually I've been surfing this great site for a while now and after many hours of reading  I feel  confident enough to take my first steps towards making an edible homemade cheese wheel. 

Originally from the Azores islands (Portugal) where I was born and "cheesed" many Januaries ago (you can tell by my adopted English language) there's a few things we can't live without: bread, cheese, home made wine, chourizo and of course fish, having the last three down pet, it is time to adopt another hobbie and cheese making is next in line. Anyway's, thanks for all the time you dedicate to this great site, I'll promise to contribute with tons of questions and some pics of my own cheese making attempts.

Why on Earth would you ever leave the Azores??? From what I've heard it's Heaven on Earth!! Glad to have you in the forum though!!

I'm in Western Connecticut...until retirement or the town's property assessor pushes my "sell the house" button  whichever comes first!

Yes, the Azores is a wonderful Archipelago, moderately temperate, quiet, naturally beautiful and full of things to see and do, matter of fact, my wife and I will be flying there next Friday returning May 15th. I suppose we came here like many other people from all over the word did; with the American Dream in mind, we soon found out that THE dream is nothing more than lots of hard work and enough diligence to succeed.

We plan to visit some cheese making facilities, if allowed to take pics I promise to post some.

I've heard of the Azores but never knew anyone from there and did not know that they were that far into the Atlantic, have a great safe trip!
