Curd, Goat's Skim Milk - Spongy & Floats In Whey

Hi, I'm new to the forum and I have tried searching for others with this problem but no one seems to have exactly one like mine.

I have 2 dairy goats and have been making cheese for about a year. I recently purchased a cream separator and every time I try to make cheese with the semi skimmed milk, the curd goes spongy and floats to the top. There is no nasty smell, in fact the curds don't smell at all.  Things are still fine if I use unskimmed milk. I have sterilized everything to within an inch of it's life so I am fairly sure no contamination is happening.

Would appreciate anyone's thoughts here  :)

I too have goats, and a separator, although mine is an old hand crank one so I dont often separate. I had that same problem last year and wondered why. Sorry I have no answer, but at least you are not alone
