Hi from NC

Hi everyone.  I've been lurking for a while trying to learn as much as I can about cheesemaking.  I'm so new at this that it would be a step up to call myself a newbie.

I'm living just outside of Charlotte, NC in Mt Holly.  I'm originally from TX but moved here almost 3 years ago.  Since I've been here I've been making my own sausage, vinegars, breads, cured meats, fermented veggies, and jsut about any other food related crafty sort of thing.  I've done wines before too but it's been a while.  Cheese seems like the logical next step for me.

Everyone seems so helpful on here, thanks for sharing what you've learned with people like me who need the wisdom.

Hi redbecca, welcome!

Don't worry about being new to making cheese, everyone here started at one time or another. Cheese Making used to be a popular Artisan Craft performed by many and thus there were many people to learn from. In our now postindustrial digital world it has largely dies out thus for those interested there are few to learn from and thus this website/forum is great!

Like you, several of our members also make several other artisan foods than cheese!

Funny you are in NC but from Texas, I'm from Vancouver CA but in Houston TX ^-^.

Also, FYI for you and other members, in the FAQ Board are several posts on IT type tricks such as how to change your Profile, how to Search, how to make Clickable Links, how to use Spell Check before posting (I use this one alot ::)), etc.

Gosh, its sounds like you have many culinary interests! I'm new to this cheesemaking also but this is the place to learn ;)

Yes, we all start out new, but I think this forum provides a huge jump up the learning curve with all that expert advice, suggestions, and support that is available.

Welcome aboard Redbecca. Sounds like we have a good deal in common although I hail from New England. Although I have been making cheeses for over 30 years I just started using commercial cultures a few years ago so in some ways I too am a newbie.

Like John says, most people here do other artisanal food too. I am in New York City and I do some cured meats, jams, pickles and bread. Yogurt has been my gateway drug to cheesemaking... Would love to see what you are making!
