Hi everyone! My name is Deanna and I am a cheese addict. I am a new cheesemaker located in the Bangor, Maine area. I took a very basic class on April 10 of this year in my local area and have made several batches of cheeses since. I will be looking to increase my skills and possibly may look at selling cheese in the future.

My other interests are training dogs, gardening, cooking, and preserving great foods!

Now, if anyone knows what "kind" of cheese those babybel cheese rounds are, i'd love to be making something at home similar...

Welcome to the forum Deanna!  What varities of cheeses have you made so far?  Have you been able to try them yet?  (Personally, I think having to wait while the cheese ages is the most difficult part of cheesemaking :)

There is a ton of information here, and the people have to be some of the friendliest on the web. Enjoy  ;D

IIRC Bel makes the babybels from processed cheese. But they are based on an edam style in terms of final fat, moisture, flavor profile, etc.

Welcome to the forum!
I always thought those babybel cheeses were gouda, though edam is pretty similar, being a washed curd cheese. They look like they're made in the little Kadova molds. They're cute little cheeses, but personally I'd rather make a large one. Its a lot less effort than making a ton of little ones!

So far I have made yogurt, yogurt cheese, fromage blanc, chevre, goat milk feta, and 30-minute mozzarella. I don't have a press yet, so no aging has happened yet, but I am hoping to get one soon!

Welcome Deanna! Bangor practicaly neighbors! I take a drive up there a few times over the summer. Maybe we can hook up sometime for lunch or something.
