I am new to this tried a 30 min mozzarella last night with no success, but will be trying again tonight different milk.

Welcome. Sorry to hear your mozzarella didn't go well for you. Apparently it is a difficult cheese for many people. You may want to search for Mrs KK's method it's very reliable.
