Hello from Ozark, MO

After posting several questions (some even got answers!) I figured it was time to introduce myself.
My wife and I live on a few acres in Ozark Missouri. We have 3  goats in milk right now.
Currently we make a serviceable chevre and feta, though I do want to play around with cultures and technique to see if they can be improved.
Our current process is milking into sanitized buckets, filter and slurry cool. We do not pasteurize.
We also have a few beehives, some chickens, ducks, turkeys and a donkey.
We have three kids who help out in the process, my 11 year old daughter does great milking while our 9 year old daughter wrangles for her and my 13 year old son is very interested in chemistry in general and its application to  cheese making in specifically.
We have two dorm refrigerators for caves (one white one blue) stock they seem to hold temp around 50, but I would like to get the external thermostats for more control.

I am getting impatient for the milk withdrawal from the wormers to end on the goats so I can try another stilton.

Thanks for the forum. It very nicely replaces the last one we were on that the owner shut down at least once.

Have you been to the home brewery supply there in Ozark? I haven't been yet, but saw online they had wax (and other supplies).

Yes we have.
We purchase our grain for home brewing from them.
I think they get most of their stuff from New England.
I don't think they do enough business to have frequent shipments of stuff coming in, but they are great to work with and are going to call my wife when they place their next order so we can get some things they don't carry.

Welcome aboard. Many of the small home brew shops have started buying supplies from Ricci Carrol. The problem is they have to order a dozen of the same item at a time so if they don't have a lot of requests they could be throwing money down the drain. That's why they all seem to carry the same few kits and cultures.
