Rennet, Aqueos - Dosage Rate For Rennet Coagulated Cheese Making

I have seen a recipe calling for
.5-.6ml double strength rennet. Is this different than regular rennet?

What do you mean by regular? Rennet activity is standardized to have specific clotting units per ml or gram per ISO standards. If you tell me which rennet you use and the cheese you want to make, and the milk, I can help provide an answer for how much to use.

This is th rennet I have been using for all my cheeses. From Cherve, Feta, Camembert and I wish to make Manchego.

I am using raw goat milk.

what does it say on the bottle in terms of recommended quantity? I don't remember whose rennet they resell.

It says 1/2 tsp/ up to 2 gallons of milk.
That is all it says.

That dose is usually for single strength. If you have a chance, call them up and ask who the manufacturer is and what the clotting activity is. That's the surest way to know exactly.
