I am from Germany, so my english is very bad (I speak better than I write!!! A) )

I work as Volunteer for FreshKids, that is a NPO who helps children in Ukraine.

We like to help the children with healthy food. So I will now learn more about making cheese...

To now we have not Dairy animals... so that I  open for all information.
We have experience in take care with Cows, Goats, Sheep's, Horses (Icelandic horses), and other animals.

Welcome FreshKids, good for you, very noble!

I have no clue in caring for dairy animals to source milk for making cheese but many others here have, to help them could you expand on
your/their environment for such animals? Also for small cheese making volumes I suspect buying milk is much more cost effective and already pasteurized.

For cheesemaking for kids, I suggest you practice first using store bought milk with some simple fresh (non-aged) cheese recipes linked here before getting the kids involved when I expect it will get much more chaotic ;D.

The Lemon Fresh Cheese have have make, and that is very simple, and good!

We will make together with the children cheese and other products.
But we will also make cheese and sell it that we have money to help the children!
So I need much information...
Good cheese recipe... and how to use the milk...
When I have make the cheese I have "Whey, lowfat milk" .... what I do with them?
How I make efficient cheese?
That I must not throw anything away?!

Good morning Freshkids, and welcome to the forum.  Wonderful work you are doing.

Ricotta can be made from whey, and so can many things. Liquid for bread making, etc.  It is also a good source of nutrient for animals, and can be fed back to them, especially pigs.  Nothing needs to go to waste.
