Hello,
I've been sneaking peeks at this forum for a while and thought I'd join so I can ask questions at some point. I currently work at a dairy, taking care of animals and making cheese, and bottling milk, and on and on.  Unfortunately, I don't get to experiment much at work on many different cheeses, so in my awfully small amount of spare time, I'm doing what I can.
We make a chevre which we flavor in many ways, and a hard cheese.  I'd like to get more experience with bloomy rinds, which I've made a few times, and a wider variety of hard cheeses.  Thanks for this great forum, and thanks to the many experienced folks who contribute their knowledge.

Welcome smily! Looking for forward to hearing about and learning from your experience. Assume you are working with goat's milk, where in the world are you at?

I'm in Oregon. I guess there's a little more to the story.  My girlfriend and I wanted a new life a year and a half ago, so we quit our jobs in the bay area of California and took a 2 month long camping trip. That girlfriend is now my wife.  We intended to end up in Washington, but along the way we decided we'd like to have a goat farm one day, so we found one to work at.
Now that we've had a baby we're trying to find something in the Redding, CA area to be closer to my wife's family.  Anybody know of anything, let me know.  Preferably in goats and cheese, but in this economy, anything will do.

I am wanting some pictures from the dairy you work with if possible.  ::)
