hey all. wanted to say hi and intro myself. i'm victor and started my artsan cheese biz this year. i'm in asheville, nc. and have been a glassblower and artist for 36 years and want to expand my creative energies into making great interesting cheeses. focusing on raw cows milk cheeses and italian types and strong flavored cheeses. got my licence in july and have been experimenting for 6 months. built an underground cave with the intent to let the natural environment direct my making efforts twords what the terroir dictates. partnered with a local dairyman raising jerseys. not certified organic but what we call bonified organic. already have learned a lot from the folks on this forum. thats it for now and thanks for a great forum. vic

Howdy victor, welcome, great snap, wow what a cave, love to see some more pix when you get some shelving and cheeses in there! Congrats on getting License, like you say gotta put it into practice, don't want it taken away!

Hi Victor and welcome to the forum. What's the deal with the cheese cave? That is some serious support work. Is it under an existing building? It looks like....a cave!

if you friend me on FB then you can see the story board of the cave build. took over a year to build. there's a concrete floor now and some shelves and about 200lbs of cheese in there now. i'll take another pick soon.
