Vaccum packing my cheese.

I would like to know if vaccum packing cheese slows down or stops it from maturing....
I generally store my cheeses for about 4 to 6 weeks so that a rind develops then I vaccum pack it...

the cheese will continue to mature. I would continue your practice and delay bagging them for a month to 6 weeks.
