Springtime - Tomme Trials

OK, Spring, and for reasons discussed with Pav, thinking, too, of tomme trials in addition to Beaufort trials over the summer months.

   1. My existing tomme was washed and brushed back regularly to produce a subtle, thinnish rind - and a lovely cheese, at least to me, and one I'd be proud to sell.  MA4001 in the vat, PLA+mycodore in the vat & wash.

   2. Thinking of doing another, same ingredients, with just an extended fighting-it out at 88%-90% for 3 weeks, then brushed back, per Pav's suggestion for a more pronounced effect. 

(One question, Pav, if you read this - if seeking this thicker, stronger, more penetrating rind effect, how often would you brush back thereafter?)

   3. MVA, in tandem with PLA;

   4. MVA, + DH + MGE +LR

Thoughts, on (2)?

If using MVA, from Pav's comment here:

As a primary and secondary ripening agent that doesn't consume lactose/lactate. It's like using mycodore and mycoderm together, it adds dimension and aroma because the enzymes target different spots on the milk caseins. One cool application, for example, is to pick a mild b linens that tends to produce a lot of buttery notes, and complement it with a Micrococcus that produces a red rind and complex smelly notes. You'll get lovely soft paste without too much goo, a great color that's appetizing, very layered flavors in the paste, and an aroma that is not unidimensionally "stinky"

Pav, or others, would folks think it's too strong, possibly (assuming there's at least some SR3 or other, fairly aromatic linens in the PLA), in (3)?

Lol, well, no.  Snow has threatened - and succeeded, in a limp way - here as well. 

OK, OK.  I am an autumn and winter guy.  I live for these months, adore the gloom, the grey, the ponderous clouds portending a kind of gothic moodiness.  But I gotta honor the alpage effect on my dolorous tendencies, the recrudescence of birds and flowers, the thawing of my stony heart.
