Raclette Cheese Making Recipe

Hi I'm looking for the recipe of raclette cheese. I searched on the forum and I found two recipes but they are very different one from the other.

Any suggestions on wich should I use? or anyone know a different one?

I have used the recipe from "200 Cheeses" and got great results.
