grass and black sand cheddar - cheddar aging temp and humidity?

Sing_cheese

based loosely on directions for hard cheese variants found in Tim Smith's artisanal cheese making book: Making Artisan Cheese: Fifty Fine Cheeses That You Can Make in Your Own Kitchen (Quarry Book) by Tim Smith.

The actual recipe I used was Rikki Carrol's traditional cheddar recipe, with addition of the black sand and grass as per Tim Smith directions.

I think that's one of the books I'm going to pick up right now...weird.
