Howdy Folks,

I am from Adelaide in South Australia. Have just found the forums and will be making my first cheese next weekend. I've purchased a kit so I'm hoping that I get cheese at the end of it all and not some dairy mess that is not fit to eat.

Have been thinking for some time that I would like to do things a little more organically and naturally without all the preservatives/chemicals etc. that are used and cheesemaking has reared its head and taken my interest.

Looking forward to learning a lot and will be hear regularly checking the board out.

Hi,

I've purchased a Hard Cheese kit from Green Living Australia. I've also included the cheese press so the only thing to get is a nice stainless steel vat thing Hopefully have that this week and then basic cheeses here I come. I'll actually try out a couple of soft cheeses first as they seem to be simpler and it will be a good test. I'll try to make a nice cream cheese and if that turns out fine then I have at least achieved the basics

I had a good many friends from Adelaide - several from your town, all from NADA at the time, came over to further study at Shakespeare & Co., in the Berkshires region of our New England.  We became very close, though sadly we've since lost touch. Your town breeds great people!

I hope you enjoy yourself here as much as I have.  I cannot conceive of learning as much, or as enjoyably, as I have through this site and its people.  All the best in your future cheese making.

Hi Dave and welcome, my brother also uses that sentence in your signature line, the ones my Dad told me as a kid was "The boy stood on the burning deck, picking his nose like mad, rolling them up in little balls and flicking them at his Dad", and "Deep in the jungle living in a tent, better than a pre-fab, no rent". I think both out of war years.

Hi John, yes, that tag line pretty much sums me up I saw it somewhere one day, can't remember where from, and it stuck in my brain.

Hi Paul, it has been a long time since I've been to New England, nice part of the country though and the folks are pretty good too, wasn't into cheeses then but wish I had been.

Thanks Louise, we are starting this journey together Hope my cheeses remain cheeses and don't just disintegrate etc. I'd like to have one good cheese to start with which is why I'm looking at the soft cheeses There is a TV program on tonight on how to make quark. It is on our pay TV, and is called "Cheese Slices", it might be on in your area.
