feta vs danish feta

Hey there, I'm just wondering about Danish feta, I understand it's a lot more creamier than traditional Greek feta, but how so? And because it's creamier does that make it higher in fat content? And is it aged as long as traditional since it's much softer and less salty? I also herd that it was made by ultra filtration? Some clarity would be much appreciated. Cheers

Hi Shannyn, I posted pictures of many types of Feta cheeses here, but no danish style Feta.

There's some back ground but no details on Danish style Feta here.

My understanding is that Danish Feta is made from cow's milk & Lipase whereas tradionally Feta is made from goat's and/or sheep's milk, so they will have different flavour profiles. If it is creamier then it could be from higher milkfat content or it could be from the type of manufactured starter cultures used.

Sorry this isn't much help but it's a start.
