Do you drain in molds or cheesecloth? I find draining in cheesecloth gives me an uneven texture, i.e., some parts are drier than others.

I've moved to using mm100 and 1/2 drop of rennet for 2 gallons of milk, working cooler - no warmer than 84F, and letting the cheese set longer to reach clean break. This is giving me a chevre that is smoother and creamier. I agree that there tends to be uneven drainage with the cheese cloth but I think working too warm makes a 'cakier' cheese than I want.
