Been lurking, reading, studying, ordering and contemplating presses and caves but still sticking with the fresh cheeses like chevre. I clabbered milk once just to see if I could and thanks to the boards, I know now I should have saved it and used it to start the next generation. Ah well, so it goes.

I actually have two sources of raw milk where I can buy mixed LaMancha, Oberhasli and Saanen goat milk or Holstein, Guernsey and/or Brown Swiss milk. The cow dairy will separate and sell it by the gallon or I can get the dairy mixed.

I live in northcentral Illinois and the farmers are in Lee County so it does take a bite out of my Saturdays but it's worth it for the fresh milk.
