Hi All

So happy to have stumbled across this forum, information on cheese is hard to come by in South Africa.....

Here are a few pics of my first cheese attempts .... I am interested in Blues and in Cheddars and Gouda's ..... but mainly blues  ;D ;D

What sort of milk are you getting there?

I will post some more detailed posts in the relevant sections in due course as i have many questions ....

4 of the 5 cheeses are made using shop bought homogonized and pasturized full cream milk.  I have since found some raw milk suppliers in my area and have made one cheddar using raw milk.

Most frustrating to me is the waiting time between actually making the cheese and finding out whether it is a good cheese or not
