I had wrapped this cheese in cheese paper. I had to try it to see what progress there was.

Interesting. Some piercings do not show any blue. They closed up apparently. This was pierced three times. It was becoming a little dry.

The last pic shows 3 slices of this cheese along with the cheese from which I got the innoculant, Royal Blue Stilton from iGourmet.com. It is a couple months old at this point.

The taste is faintly blue. Naturally not as rich as the Stilton from which it sprang, but not bad for a first effort. I have somewhat of an idea what the sequence is at this point.
