Hello from NW Ontario

Good Day All,

I have been reading here for a while and I figured that I had better introduce myself.

My cheesemaking adventure has just started with the purchase of our first cow three months ago, a registered Jersey named Chelsea. She is currently giving almost a gallon a day and we are just about to dry her off in prep for her calf that is coming. (but mainly because I am a wuss and don't want to milk when its -40 out LOL)

I have tried a few cheeses and have had some successes and some failures. All within the learning curve though I suppose. I would eventually love to be able to sell our cheese as a full time job but for now that is just a pipe dream.

So far I have attempted mozza - turned out quite well, queso blanco - good but I didn't really like it unless I cooked it like I would paneer, queso fresco - epic fail LOL although to be honest melts quite well and I have been able to mix it in to other dishes where no one has noticed, and cheddar which being the very first cheese I tried and I definitely jumped into the deep end turned out really well. It is almost 2 months old now and I have been sampling every week a small piece then wrapping it up and putting it back in the fridge. Oh yeah, and I have a really good clabber that I would like to try and make cheese with.

Next on my want to try list is cotija, feta, and parmesan.

I look forward to learning, I have already learned so much just reading.

Always good to have more Canucks here, I grew up in Vancouver and my wife in Calgary, our second daughter just started college at Queen's in Kingston Ontario, a long way from you.

Get ye some Lipase and you'll be in Feta heaven!

Actually I do have lipase, it just arrived in my last order. That is what I was waiting for before trying it. I can't wait, feta is uh, one LOL, of my favourite cheeses.  :D Actually I think I'm going to make it today  :D

Yes, Kingston is a LONG way away from here. Although small world, as I grew up in the Trenton area which is not far from Kingston, before venturing to the cold tundra of Thunder Bay LOL.
