Does anyone know if rennet changes the PH of milk. Because I'm making my farmhouse cheddar right now and I forgot to take a PH reading before adding rennet. I added the rennet, stirred and took a sample. I already stirred in the rennet so I wanted to make sure the rennet doesn't raise or lower PH so I can see if my reading was accurate?

I have not seen that rennet itself changes the pH of Milk.

I have also not seen a drop after adding rennet, of course when ie at what pH to rennet is another discussion.

Thanks guys. So at least I saw a drop in PH, which from what I've been told is important, before adding rennet.

My milk went from pH 6.75 to pH 6.45 when i added the CaCL2 today.

Really? Hmm. I add mine while the milk is heating up so I don't forget to add it. I can't remember if I took my PH reading before I added it or after, probably after. My starting PH was 6.9. Then after heating up to....ya know what I'll finish this in my post on this batch in the other thread.
