Thinking of making my own cream cheese and was wondering approximately how much raw milk would be needed to get 2litres of cream.  Thx.

I think it depends on the cream cheese type. (some are fattier then others...)

Perhaps I didnt word my question clearly - the cream cheese recipe calls for 2l of cream.  How much raw milk would I need (approximately) to be able to skim 2l of cream from it.

It depends, on the breed, on the cow, on the time of year, on the stage of lactation,... you get the idea.

I milk a Jersey who is doing her best to save her cream for her calf.  It would take about 16l of her milk just now.  My previous Jersey would have given 2l of cream in 8l or less of milk.
