Condensation on Cheese from Evaporator Loops

Hey all,

I'm having a problem in my caves. The sides of cheese that are about half a foot or less away from the evaporator coils on the wall are getting a good amount of condensation on them--to the point that it's starting to ruin rinds. I don't have a lot of space to work with, so I need to come up with a quick solution.

Would hanging plastic sheeting between the loops and the cheese keep water from condensing on them, or am I going to have to look for a different solution?

The humidity in the caves is steady around 80-85% now, and I can't afford to drop it any lower.

I managed to route condensation away from my cheeses by putting a plastic tent between the coils and cheese in my cave.  It condenses on the coils, then falls on the tent and is routed to run down the walls.  It's not perfect, but I can have natural rind cheeses now.  Good Luck!
